Pumpkin Recipes

Let's share pumpkin recipes.  Here's a cookie made with canned or cooked fresh pumpkin:

Pumpkin Drops

3/4 cup butter or margarine, room temperature 1/2 teaspoon baking powder
2/3 cup packed brown sugar 1/2 teaspoon baking soda
2 eggs Pinch of salt
1 1/2 teaspoons vanilla extract 2 1/2 teaspoons pumpkin pie spice
1 cup canned or cooked fresh pumpkin 1 cup raisins
2 cups all-purpose flour 1 cup chopped walnuts, optional

 

 

 

 

Preheat over to 375F (190C). In a large bowl, beat together butter or margarine, brown sugar, eggs and vanilla until light and fluffy. Beat in pumpkin. Add flour, baking powder, baking soda, salt and pumpkin pie spice, beating until blended. Stir in raisins and walnuts. Drop by teaspoonfuls, 2 inches apart, on ungreased baking sheets. Bake 10 - 12 minutes or until edges are golden. Remove cookies from baking sheets; cool on racks. Makes about 80 (1 1/2 inch) cookies.  Enjoy!
